Funfetti Cinnamon Rolls



For the birthday brunch, I made these delicious Funfetti Cinnamon Rolls. When I first looked at the recipe I almost called it quits from the start. I thought it would take me forever to cook, but good news... it was a lot simpler than I thought! I was also able to make the dough the night before, which made morning prep really easy!

Ingredients:
For the cinnamon rolls:
5 cups all-purpose flour
1 package of funfetti cake mix
2 packages (1/4 ounce each) quick rise yeast
2-1/2 cups warm water (120 to 130 degrees)
1/4 cup butter, melted or squirt butter
1/2 cup sugar
1 teaspoon cinnamon

For the Cream Cheese Frosting:
4 ounces cream cheese, softened
1/4 cup butter, softened
1 tablespoon milk
1 teaspoon vanilla extract
2 cups confectioners' sugar
garnish - sprinkles, for the top of the cinnamon rolls

Directions: 
Mix 4 cups of flour, cake mix, yeast and water until soft dough forms. You can add extra flour as needed. Knead dough until soft and elastic, about 5 minutes.

Place in greased bowl and turn over once, greasing all sides of dough. Cover and place in fridge overnight to let dough rise. You can also leave on counter for 45 minutes to rise quickly. 

Once the dough is ready (or the next morning) divide in half and roll half out on a cool floured surface. Preheat your oven to 400 degrees. Spray two 9 x 13 baking sheets with non stick cooking spray.

Cover dough with butter, cinnamon, and sugar. {I used squirt butter so it would spread smoothly.}

Next, begin rolling up dough jelly-roll style.

Slice dough into small 1 inch sections. 

Place rolls on greased cookie sheet and let rise for 25 minutes. 

This is where you can make your icing. Mix cream cheese, butter, milk, vanilla, and confectioners' sugar until smooth. Set aside until rolls are ready to icing! 

Bake in 350 degree oven for 20-25 minutes, or until golden brown. 

Spread cream cheese icing on warm rolls and top with sprinkles. 

Enjoy!! This recipe makes about 36-40 rolls.. Next time I'll cut the recipe in half or maybe find a way to freeze half the dough for later. I also think they would be good with a lighter icing... maybe just confectioners' sugar and milk.

A Birthday Celebration!

I love celebrating birthdays, especially when it is celebrating someone I love,
which in this case was my wonderful hubby! 

We started the weekend with First Friday's at Sweet Treats and catfish and grits at Bistro {so yummy}. Love me some bluegrass and bevs, and love that's it's just a short walk down the street! Check out the old black and white tile, it's so neat.


Saturday we started the birthday with a fabulous brunch with some of our closest Lexington pals.

After brunch, we headed up the road with 3 other couples to celebrate Jesse and Matt's Birthdays in Staunton for the evening.  We stayed at the Stonewall Jackson Hotel - such a beautiful historic property right in the heart of downtown. Perfect for walking to the shops, bars, and dinner!

Dinner at Byers Street Bistro was so delicious and celebrating with great friends was perfect! Always a great time together. So happy they could all join us for a fun night and Sunday brunch! 


Shrimp pizza for me and Bourbon steak for J. Meg treated the boys with a cookie cake too!

Love these guys!  Thanks for making Jesse and Matt's birthdays so special and helping us toast to another great year.

Five on Friday

What a week!  Man, this one certainly flew by... I feel like I was just basking in the sun last weekend... and here I am, still looking at snow. Soon... very soon spring, I can feel you! We have a great weekend to look forward to, so I'm not complaining... just can't believe it.  I'be had a really exciting week and celebrating and catching up with good friends that I thought I would share for my five on Friday. 

{one} Sweet Lyns!
This sweet girl turned 30 yesterday... and is exactly 40 weeks pregnant too!! Baby H decided to hold off on her arrival and give momma her own 30th celebration, but she should be here any day. I can't wait to meet that sweet lil gal!

{two} Fat Tuesday
We had a fabulous dinner with our Lex Supper Club on Tuesday... I flew into town at 5:15 on two wheels and whipped up a pretty tasty cajun dinner for us {hello Zatarain's Jambalaya}, and as always it was so great to catch up with great friends and enjoy a little king cake from the coast!

{three} Dinner with Walt & Suz

On Wednesday, we scooted out of town to our friends house {yes, that is a house above... if you can see through her amazing garden}, that live on the river and dined on some delicious lasagna, salad, and bread. Suz is such a great cook, but it was so great just catching up and oogling over their new house plans. I can't wait to see this thing come to fruition - it's going to be amazing!

My mom and I picked up this guy on Monday... at, wait for this...Wal-Mart of all places! It's Daskin and so soft and cozy. I couldn't believe the price - $9.99. Love me some sweet deals!


{five} The Hubs Birthday Celebrations!!

Tomorrow is the hubs 35th and I have a weekend full of fun planned!! I can't wait to tell you all about it next week.... hope he loves our sneaky plans. Shh.....

Lent and Fish

Lent is upon us! Year after year, right around this time, all of the fast-food chains start competing for the "best fish on the market." I even saw that Krystal has a new "Krystal Fish," wonder how that is at 3 a.m. Guess only those of you in Mobile, Ala. will get the chance to let us know. But, I always wonder how many people this actually draws in the door.... I mean, you could just have PB&J on Fridays, but heck - why not venture out for a filet-o-fish? So, that's what we did!

I think it's become a tradition for us {ok, maybe one that started just last year}, but year two makes it a tradition, right?  So, today for lunch we went to mass at 12:15 and ventured out for our second annual Ash Wednesday fish sammie battle of the filet's.  {HaHa.. my husband is going to die laughing when he reads this.} In reality, we are not your typical fast foodies. We eat Subway on occasion and sometimes grab a box of chicken nuggets while on the road, but that's about it.  So, today is sorta like a special treat to kick of the lenten season. {Which is supposed to be a day of fasting, I know. But this girls gotta eat - so off to the fast food mecca we went.} This years' choice - the Charbroiled Atlantic Cod Sandwich from Hardee's.  Folks, this was not too shabby!  Yes, it was shaped like a square - which is odd - but it tasted wonderful. Not too fishy, not too salty or grilled, just right! It also came in at 380 calories and 19 grams of protein. If you remove the tarter sauce, I'm sure you could get the 18 grams of fat down a lot. Not as healthy as cooking at home, but overall - I was throughly impressed with my $3.99 quick lunch.

I will say, sometimes nothing beats a good old fried fish patty on white bread with pickles... but I feel a lil bit better with our selection today.  What's your go-to non-meat during lent?

Mardi Gras and Hometown Shenanigans

Happy Fat Tuesday! 

Thanks to the snow storm in Virginia, I got one more day at home on the gulf coast... And boy was it a beauty! I got out for a long bike ride through the state park and got some work done waterside. The perfect way to end a fabulous trip home! Now for my weekend recap. 

Friday mom and I had a great seafood lunch on the beach, followed by a trip to Old Time Pottery and the Outlets. 

Such a fun day with my momma. I also got to spend a lil time with the kiddos. 
Saturday was full of wedding excitement for Miss Lindsay B... Wedding shower in the morning and B'ette party at night! 

Love these girls! We had a blast, and even won a little money at the boats for the wedding fund.

We had a beautiful Sunday, so we headed to the beach for some sunshine and enjoyed the day outdoors. I thought I would be heading back to winter wonderland on Monday... But thanks to Mother Nature, I got one more day on the coast. So I took a bike ride...
And mom and I took a trip to Target for their BOGO sale. Such a good deal. 
I picked up two bathing suits for $50. 
Now, I'm ready for summertime!! 

 I am loaded down with moonpies, zapps, beads, and king cake. Heading home for a Mardi Gras celebration in Lex, Va. tonight.

Five on Friday

Happy weekend!! I'm so looking forward to a fun-filled weekend at home, but wanted to also share a few highlights from my week! 

{one}
First, I wanted to wish a very Happy 30th Birthday to one of my besties, Meg! I hope you have a fabulous weekend and a super fun-filled year ahead. So many awesome things to look forward to. I love you!!

Maple bacon doughnuts. You guys, this doughnut was delicious! We finally picked up our last box of "doughnuts for a year" that the hubs won at a silent auction last February. May have added on a few extra lbs, but they were totally worth it!

Meg's sweet momma found this Pineapple in her collection and wanted me to have it. So sweet! It's so beautiful! I can't wait to wear it. My new favorite pineapple piece!! Thanks Mrs. Jo!

Last but certainly not least, I can't wait to reconnect with my HS gal pals! It's been way too long since we had a fun time out on the town together. This weekend we are celebrating this pretty girl who gets married later this month and I can not wait!
